This is a 20-page E-book designed for Dietitians working in long term care/group homes and assisted livings. Food consistencies and what is allowed on a particular diet is constantly changing and can be confusing to us as dietitians and even for kitchen staff. This book was created with the intention of helping dietitians and kitchen staff.  If you are a dietitian new to consulting in long term care or group homes this would be very helpful for you, it has various in-services you can offer to staff. It also has practice tests included that can be copied/replicated after they have reviewed the in-services.

These are the things included.

  • Introduction: This includes learning objectives (why someone may require an altered diet), how to prepare these items and identify items that are allowed on a patient’s altered diet.
  • Dysphagia: What is Dysphagia and the need for altered food items.
  • I have included the standard guidelines for modified texture diets and liquids. Inservice’s include various liquid and solid consistencies and food safety Inservice as well. Practice test is included at the end of each Inservice, these are printable as is the sanitation check.

  • Images have been included for quick learning.
  • A wonderful sanitation checklist/form that is tested and tried is also included.
